If you ever buy a coconut and hear no water when you shake, put it down my friend, that mother is no good.
I remember when I was young and I wanted to get the water out of the brown, mature coconut. I would find an edge – the side of a door, the edge of the floor. I would have a bowl close by – a receptacle for the off-white water when the nut hit the floor and went ‘crack, crack, crack’.
There was always a scramble to set the crack over the bowl so one didn’t lose any water but that was never the case. We always left some for the ground. Some sort of worship and the remainder drunk hurriedly, somehow never enough to satisfy the hint of sweet that was suggested but never quite came.
And then I discovered the eyes of the coconut – two closed and one that could be opened and that was the very end of losing my delicious coconut water.
The coconut has three (3) eyes on its rounded end sitting in three (3) segments. The soft eye is in the largest segment, demarcated by particularly fibrous ‘lines’. Test all three if you like.
To open up an eye, I use a chopstick to bore a hole. You want something that can pass through a bit of soft nut.
All it requires is a few seconds and then, you’re done.
You can imagine yourself on a beach, sipping on some rum spiked coconut water.
Or you could tip it out for more. A simple upturn into a bottle or glass and maybe a few shakes should leave all the water found, none for the ground and a nut you are free to crack.
And then you’re done.
Free to drink the water or make a mixer out of it.
I’m partial to a coconut and lime drink, where I squeeze quarters of fresh, tart juice into my barely milk water. And remember how far I’ve come from the days of ‘crack, crack, crack’.
