Yep, I think I have a vegan winner with this one. Yep.
This jelly is made with sweetened Agbalumo juice and set at room temperature in no time.
I couldn’t find gelatine sheets in Lagos – and no, I did not look in every single shop. So agar agar it was.
Anyhoo, the texture takes some getting used to (for me though) – it’s not quite the rubbery, jiggly set from gelatine. It isn’t offputting, its just different, more brittle.
The beautiful thing about it? The flavour. 100% Agbalumo. Win. Win. Win.

How to make it?
Prepare your liquid — in this case Agbalumo juice obtained by macerating.
Whisk 1 teaspoon of agar agar into 1 cup of Agbalumo juice.
Heat up mixture on medium to low heat till it comes to a boil. At this stage I was worried because I thought the heat would destroy the Agbalumo flavour but no, it didn’t’. So thrilled.
Pour into mould – no need to grease or line beforehand
Leave to set at room temperature, about an hour. Then use as desired. Store leftovers in the fridge.
I’m thinking of plating ideas. This version features ice cream though because…’Ice cream & Jelly’. And brownies but imma do some more tests.
